Vanilla Date and Nut Roll

1/8 teaspoon salt
1 egg white
3 1/2 cups (about) sifted powdered sugar
1 tablespoon butter
1 teaspoon pure vanilla extract
12 pitted dates, finely chopped
1/2 cup chopped pecans or walnuts

Add salt to egg white and beat only until foamy.  Gradually add 1 cup powdered sugar.  Add butter and vanilla and beat well.  Stir in remaining powdered sugar.  Mix well. Turn onto a board sprinkled lightly with powdered sugar.  Knead in chopped dates.  Form into 2 rolls, 2 inches in diameter.  Foll in chopped nuts.  Wrap in waxed paper and chill.  Cut into 1/2 inch slices when cold.  Makes 1 1/2 dozen pieces.
