Apple-sauce Nut Bread

Apple-sauce Nut Bread

(Yield: 1 9x5x3-inch loaf)

2 cups sifted all-purpose flour
3 teaspoons baking powder
1/2 teaspoon cinnamon
1 teaspoon salt
1/2 teaspoon soda
1 cup coarsely chopped walnuts
1/2 cup S&W black Monukka raisins
1 egg
3/4 cup brown sugar, firmly packed
1 cup S&W apple sauce
1/3 cup melted butter or shortening

Sift flour, baking powder, cinnamon, salt and soda together.  Stir in walnuts and raisins, tossing to coat well with flour mixture.

In mixing bowl, beat egg and sugar until creamy; then add apple sauce and shortening, mixing well. Stir in flour mixture just until blended.

Turn into greased 9x5x3-inch loaf pan and bake at 350-degrees for 60 to 70 minutes, or until wooden pick thrust into center comes out clean.  Cool in pan 10 minutes before removing.  (This bread slices better when cooled overnight.)
