Peppermint Souffle

Peppermint Souffle

1 envelope unflavored gelatin
1/4 cup cold water
1/3 cup sugar
3 egg whites, stiffly beaten
1 cup heavy cream, whipped
2 to 3 drops oil of peppermint
1/2 cup crushed peppermint-stick candy

Soften the gelatin in cold water.  Dissolve thoroughly over hot water.  Cool slightly.  Gradually beat the sugar into the stiffly beaten egg whites.  Fold in dissolved gelatin, whipped cream, oil of peppermint and the crushed peppermint candy.  Turn into a 4-cup mold and chill until firm.  Un-mold and decorate as desired.

Yield: 6 to 8 portions
