Divinity Christmas Candy

2 1/2 cups sugar
1/4 teaspoon salt
1/2 cup light corn syrup
1/2 cup water
2 egg whites, stiffly beaten
2 teaspoons vanilla
1 cup chopped pecans or walnuts
Candied cherries
Pecan or walnut halves

Combine sugar, salt, corn syrup and water in a 2 1/2 quart saucepan.  Mix well.  Bring to boiling point and cook without stirring, to 252 degrees or until a small amount of syrup forms a hard ball in cold water.  Wiping away sugar crystals from sides of pan with a damp cloth wrapped around tines of fork.

Pour syrup slowly over beaten egg whites, beating constantly.  Continue beating until candy will hold its shape.  Add vanilla and chopped nuts.  Drop from a teaspoon onto buttered surface.  Top each with a whole candied cherry or pecan.

Makes 5 dozen pieces.
