Cranberry Nut Bread

1 cup fresh cranberries
1 cup sugar
1 cup all-bran-cereal
1 cup milk
1 egg, slightly beaten
1 tablespoon grated orange peel
2 1/2 cups sifted flour
4 teaspoons baking powder
1 teaspoon salt
1/2 cup chopped nuts
2 tablespoons shortening, melted

Put cranberries through food chopper.  Mix with 1/4 cup of the sugar.  Combine cereal, milk, egg and orange peel.  Let stand until most of the moisture is taken up.  Sift flour and measure.  Sift again with baking powder, salt and remaining 3/4 cup sugar.  Add nuts.  Add to cereal mixture together with cranberries and shortening, stirring just until combined.  Spread batter evenly in greased 9 1/2-by-5 1/4-inch pan.  bake at 375 degrees for 1 hour.  Storing overnight will make slicing easier.

Yield: 1 loaf
