Minted Walnuts

1 cup sugar
1/3 cup water
1 tablespoon light corn syrup
1/8 teaspoon salt
4 marshmallows
Peppermint extract, a few drops to taste
2 1/2 cups walnut halves

Combine sugar, water, corn syrup and salt in small saucepan.  Stir over low heat until sugar is dissolved.  Boil to 236 degrees, or until a few drops form a soft ball when dropped in cold water.  Remove from heat.  Add marshmallows and stiff until dissolved.  Add peppermint flavoring and walnuts.  Stir gently until mixture becomes creamy.  Turn out on wax paper and separate walnuts.

Yield: About 1 pound
