Finnish Coffee Fingers

1/2 cup finely chopped blanched almonds
3 tablespoons sugar
1 1/4 cups sifted flour
1/2 cup butter
1 teaspoon almond extract
2 tablespoons sugar
1 egg white, slightly beaten

Cream butter with almond extract, add 2 tablespoons sugar gradually creaming until fluffy.  Add flour in fourths, thoroughly blending after each addition.  Chill in refrigerator.  Cutt off small pieces of chilled dough and roll with the hands about 1/2 inch thick and 2 1/2 inches long to resemble fingers.  Combine 1/2 cup chopped almonds and 3 tablespoons sugar.  Brush cookies with slightly beaten egg white, roll in almond sugar mixture.  Carefully place cookies on the cookie sheets.  Bake at 350 degrees 10 to 12 minutes.

Be sure the oven is heated to the proper temperature for cookies.  Set dial of heat control and turn on heat 10 to 20 minutes before oven is to be used.

Makes 5 dozen cookies
