Date Orange Loaf

Date Orange Loaf
(Yield: 1 loaf cake)

1 1/2 cups fresh California dates
1 egg
1 cup brown sugar (packed)
2 tablespoons oil
1 tablespoon grated orange rind
1 teaspoon vanilla
1/2 teaspoon rum extract
2 1/2 cups sifted all-purpose flour
1 teaspoon salt
2 teaspoons baking powder
1 teaspoon baking soda
3/4 cup orange juice

Chop dates.  Beat egg and brown sugar until light and creamy.  Blend in oil, orange rind and flavorings.  Sift flour with salt, baking powder and soda.  Add alternately with orange juice to egg mixture.  Stir in dates.

Turn into a greased 9x5x2 1/2 inch loaf pan.  Bake in a moderate oven 9350 degrees F.) for 55 minutes until bread tests done.

Cool on a wire rack, in pan, for 10 minutes; turn out of pan onto rack, and cool thoroughly before cutting.
