Maraschino Cherries - Three Day Method
(Yield: About 5 pints)

4 1/2 pounds Royal Anne cherries
9 cups sugar
3 cups water
1 ounce red food coloring
1 ounce almond extract
Juice of 1 lemon

Wash and pit cherries.  Soak overnight in a brine made of 2 tablespoons salt and 1 teaspoon powdered alum for each quart of water used to cover fruit.

Drain and rinse thoroughly in cold water.  Add sugar, water and red coloring.  Bring to a boil.  Let stand 24 hours and bring to a boil a second time.  Let stand again for 24 hours.

Add almond extract and lemon juice.  Bring to a rolling boil.  Remove from heat.  Fill sterilized, hot jars and seal.

Note: One pound of cherries is about 3 cups stemmed cherries.
