Baked Apples in Cinnamon Cups

Pastry-cinnamon cups:

Pastry for a one-crust pie
2 teaspoons sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

Prepare dough and roll to 1/3 inch thickness.  But in four 6-inch circles.  Prick lightly with a fork.  Press each dough circle over a same-size circle made from heavy-duty foil.  Holding pastry and foil together, shape into ruffled cups by fluting the edges.  Bake at 450 degrees for 10 minutes or until done.  Cool and remove foil.  Combine sugar and spices and sprinkle over inside and edge of pastry cups.

Baked apples:

4 apples
2 tablespoons sugar
1 tablespoon butter
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

Wash, core and peel apples about 2 inches down from the top.  Place apples in an oven-proof dish with enough water to cover the bottom of the dish.  Combine sugar, cinnamon and nutmeg.  Fill each apple center with sugar-and-spice mixture and top with a dab of butter.  Cover.  Bake at 350 degrees for 45 to 50 minutes.  Place apples in cooled pastry cups and serve with whipped cream.

Yield: 4 baked apples
