Peppermint Frosting

Peppermint Frosting

1/3 cup instant powdered cream
3 tablespoons very hot water
1/4 cup shortening
3/4 teaspoon salt
1 (1-lb.) package confectioners' sugar, sifted
4 drops red food coloring
2 drops peppermint extract
1 cup crushed red - and - white peppermint-stick candy

Sprinkle instant powdered cream over hot water and blend.  Add shortening, salt and 2 cup sugar.  Beat until smooth.  Add remaining sugar, a little at a time.  Beat until smooth and of spreading consistency.  (For the right spreading consistency, you may need to add another tablespoon of hot water, a little at a time.)  Add food coloring and peppermint extract.  Add crushed candy, or sprinkle on frosted cake.

Yield: Frosting enough to fill and frost two 8 or 9-inch layers
