Sugar-Maple Apple Cake

1 package sugar-maple cake mix
1 cup water
2 eggs, unbeaten
1 cup coarsely chopped pared apple (about 1 medium apple)
1/2 teaspoon cinnamon
1/3 cup finely chopped pecans
Fluffy Maple Frosting

Empty cake mix into large bowl.  Add water, eggs, apple, and cinnamon.  Beat at medium speed of electric mixer for 3 minutes, or by hand until batter is smooth and creamy.  Fold in nuts.  Pour batter into two round 9-inch later pans which have been greased and floured on the bottom and sides.  Bake in a moderate oven 350 degrees for 35-40 minutes.  Cool. Prepare frosting and spread between layers and over top and sides of the cake.

Yield: 1 2-layer 9-inch cake

Fluffy Maple Frosting

2 egg whites, unbeaten
1 1/2 cups sugar
1/8 teaspoon salt
1/3 cup water
2 teaspoons light corn syrup
1/2 teaspoon maple flavoring

Combine egg whites, sugar, salt, water and corn syrup in top of double boiler.  Beat about 1 minute, or until thoroughly mixed.  Then place over boiling water and beat constantly with sturdy egg beater (or at high speed of electric beater) 7 minutes, or until frosting will stand in stiff peaks.  (Stir frosting up from bottom and sides of pan occasionally with rubber scraper, spatula or spoon.)  Remove from boiling water.  For a smooth frosting, pour at once into a large bowl for final beating.  Add maple flavoring and beat 1 minute, or until thick enough to spread.

Yield: Frosting for 9-inch cake
