Parmesan Cheese Bread

New twists to old favorite recipes make bread making an adventure.  Parmesan cheese added to a dough and shaped into small loaves adds a new look and taste.  Or an American version of pizza is fun to bake and serve.

Parmesan Cheese Bread

1 package dry yeast
1/4 cup warm water
1 cup milk
1 Tablespoon sugar
1 teaspoon salt
1 Tablespoon shortening 3 3/4 cups sifted flour (about)
1 egg
3/4 cup grated Parmesan cheese

Soften yeast in water.  Scald milk, add sugar, salt and shortening and stir to dissolve.  Cool to lukewarm.  Stir in 1 cup flour, the egg and cheese.  Add softened yeast.  Beat well.  Add remaining flour to make a moderately stiff dough.

Turn out onto lightly floured pastry cloth and knead until smooth and satiny, about 5 to 8 minutes.  Placed in greased bowl, cover, and let rise in warm place until doubled (about 1 1/2 hours). Punch down.  Let rest 10 minutes.

Divide dough into four parts and shape each into small loaf pan and place on greased baking sheet.  Let rise until doubled (about 45 minutes).  Bake in 374-degree oven 25 mintues.  While still hot, brush with melted butter and sprinkle Parmesan cheese over the top.
