Pineapple Conserve

1/2 cup finely sliced orange peel
2 cups orange sections
6 cups diced fresh SnoBoy pineapple (1 medium sized fruit)
3/4 cup water
1 cup seedless raisins
6 Tablespoons lemon juice
1 cup broken English walnuts
3/4 cup sugar for each cup of cooked fruit mixture

Remove rind from oranges and scrape out inner white pulp with a dull knife or spoon.  Cut rind into narrow strips.  Remove membrane from orange sections.

Combined diced fresh pineapple and water; cook until pineapple begins to soften.  Add all the remaining ingredients except the sugar.  Measure this fruit mixture and for each cup add 3/4 cup sugar.  Cook over low heat until mixture thickens, stirring frequently.  Pour into hot sterilized jars and seal at once.
