Ripe Plum Relish

Ripe Plum Relish

2 pounds fully ripe plums
1/2 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon allspice
6 1/2 cups sugar
1/2 cup vinegar
1/2 bottle liquid fruit pectin

Pit but do not peel the plums.  Cut in pieces and chop fine.  Add spices if desired.  Measure 3 1/2 cups fruit into a very large saucepan. 

Add sugar and vinegar to the fruit in saucepan and mix well.  Place over high heat, bring to a full rolling boil, and boil hard 1 minute, stirring constantly.  Remove from heat and at once stir in liquid fruit pectin.  Stir and skim for 5 minutes to cool slightly, to prevent floating fruit.  Ladle quickly into glasses.  Cover relish at once with 1/8 inch hot paraffin. 

Yields about 10 medium glasses.
