Walnut Meringues

2 cups walnut meats, ground
1 pound pitted dates, ground
2 teaspoon grated lemon rind
3 egg whites
2/3 cup sugar

Grind walnuts and dates together; add grated lemon rind.  Beat egg whites until stiff and add sugar gradually, beating until meringue stands in peaks.

Shape walnut-date mixture in tiny balls, pick up with tongs and roll in meringue mixture.  Bake on greased cookie sheet in 250-degree oven about 30 minutes.  Decorate with bits of candied cherry.

Makes about 50 tiny walnut meringue confections.
