Date-Filled Cookies

(Yield: 1 1/2 dozen cookies)

1/2 pound pitted dates chopped fine
1 cup boiling water
1 1/2 Tablespoons lemon juice
1/4 cup sugar
1/8 teaspoon salt
2 cups spoon-size shredded-wheat biscuits
1 cup sifted flour
1/4 teaspoon salt
1 teaspoon baking powder
1/2 cup butter or margarine
1/2 cup light-brown sugar packed firm
1/4 cup milk

Cook dates in boiling water about 3 minutes.  Add lemon juice, sugar and salt.  Cook, stirring frequently, until mixture is thick.  Remove from heat and cool.

Preheat oven to 375 degrees.  Roll shredded wheat into fine crumbs.  Sift flour and measure.  Sift again with salt and baking powder.

Cream butter and sugar until light and fluffy.  Add cereal and mix well.  Alternately add dry ingredients with milk, mixing just enough to combine.  Chill dough.

Roll out dough on floured board to 1/8-inch thickness.  Cut with floured 3-inch biscuit cutter.  Put filling on half of the dough.  Fold remaining half over and press edges together.

Bake for 12 minutes.  Let cool and ice with confectioners' sugar icing.
