Banana Fritters Deluxe

Yield: 6 servings

Fritter Batter:

1 3/4 cups sifted flour
1/2 cup Kretchmer Wheat Germ
5 teaspoons baking powder
2 teaspoons salt
1/2 cup sugar
4 teaspoons melted butter
2 eggs, beaten
2/3 cup milk
1 teaspoon vanilla
4 firm (not ripe) bananas
Vanilla Ice  Cream

Sift dry ingredients and add liquids.  Mix well.  Cut each banana crosswise into 3 equal parts.  Flour bananas and dip into batter.  Fry in deep fat at 375 degrees until golden brown.  Serve hot iwth ice cream and the following:

Coffee Rum Sauce:

2 cups sugar
4 Tablespoons cornstarch strong
6 Tablespoons cold coffee (strong)
4 Tablespoons butter
2 teaspoons rum flavoring

Melt sugar in skillet, stirring constantly.  Add cornstarch and coffee mixed together.  Cook until sauce thickens.  Remove from heat; add butter and flavoring.  Serve hot.
