Pineapple Dessert

2 cups vanilla-wafer crumbs (1/2 pund package, crushed)
1/2 cup butter or margarine, softened to room temperature
2 cups sifted powdered sugar
1 teaspoon vanilla
4 egg yolks
1 cup (1/2 pint) heavy cream, whipped
1 cup drained, crushed pineapple (1 14-ounce can)

Spread 1 1/4 cups cookie crumbs in 9 by 9 by 2-inch pan.  Cream butter, powdered sugar and vanilla until fluffy.  Beat in egg yolks, separately.

Carefully spread mixture over crumbs.  Beat cream stiff.  Fold in drained pineapple.
Spread carefully over butter-sugar layer.  Top with remaining cookie crumbs.  Cover with waxed paper.  Cut in squares to serve.

Yield: 12 servings
