Applesauce-Cherry Mold with Custard Sauce

1 package cherry-flavored gelatin
1 cup hot water
1 cup homemade or canned applesauce
1 egg white
2 tablespoons sugar
1 cup macaroons broken into large pieces
2 tablespoons chopped maraschino cherries
Whole maraschino cherries for garnish
Custard sauce

Dissolve gelatin in hot water.  Add applesauce.  Chill over ice water until slightly thickened.  Beat egg white until barely stiff.  Gradually add sugar, beating constantly until very stiff.

Fold into gelatin mixture.  Fold in macaroon pieces and cherries.  Pour into mold; chill until firm.  Unmold and garnish with whole maraschino cherries serve with custard sauce.

Yield: 6 servings

Custard Sauce

1 package instant vanilla pudding
1 3/4 cups milk
1/2 cup heavy cream
1/2 teaspoon almond extract

Follow directions on package of pudding mix using mix and milk.  Stir in cream and almond extract just before pudding sets.

Yield: 6 servings
