Pineapple Cheese Nut Bread

2 cups sifted flour
3/4 cup sugar
3 teaspoons baking powder
1/2 teaspoon soda
1 teaspoon salt
1 cup crushed pineapple
2 Tablespoons melted shortening
1 egg
1/2 cup grated sharp Cheddar cheese
1/2 cup chopped walnuts

Sift together flour, sugar, baking powder, soda and salt.  Stir crushed pineapple and shortening into lightly beaten egg.  Add dry mixture to egg and pineapple.  Stir quickly until all is moistened.  Lightly stir in cheese and walnuts.  Turn into a greased loaf pan (9x5x3 inches). Bake in a 350-degree oven about 1 hour, or until browned and cooked completely through in center.  Cool completely before cutting.  Flavors and texture are better the next day.
