Butterscotch-Rice Bavarian

1 envelop unflavored gelatin
1/2 cup cold milk
1 1/4 cups very hot milk
2 cups cooked rice
1 cup brown sugar
2 Tablespoons butter, melted
1/2 teaspoon salt
1 teaspoon vanilla
1 cup heavy cream, whipped
1 cup broken nut meats

Soften gelatin in the 1/2 cup cold milk.  Dissolve thoroughly in the very hot milk.  Stir in cooked rice, brown sugar, butter and salt.  Cool.  Fold in vanilla, whipped cream and nuts.  Turn into a mold and chill.  Serve unmolded with butterscotch sauce.

Yield: 6 portions
