Peanut-Butter Balls

1 pkg (3 1/2 oz) flaked coconut (1 1/2 cups)
1 teaspoon vanilla extract
1/3 cup peanut butter

In small bowl, thoroughly blend 1 cup coconut with remaining ingredients.  Scoop up mixture by teaspoonfuls, and shape into balls.  Roll in remaining coconut.  Place on waxed-paper-lined cookie sheet; refrigerate until firm - about 1 hour.
