Jelly-Roll Swirls

1/2 (3-ounce) package lemon pudding
1 (6-inch) baker's jelly roll
1/2 cup heavy cream, whipped
1 Tablespoon sugar
1/4 teaspoon vanilla
2 Tablespoons strawberry or currant jelly

Prepare lemon pudding according to package directions.  cut jelly roll into 12 slices.  Place lemon filling over six jelly-roll slices.  Top each with a jelly-roll slice.  combine whipped cream, sugar and vanilla extract.  Top each serving with whipped cream and a teaspoon of strawberry jelly.

Yield: six servings
