Italian Prune Jam

Italian Prune Jam

4 cups chopped Italian prunes
3 cups U&I sugar
Grated rind of one lemon
1/2 cup chopped walnuts, or blanched almonds, if desired

Combine prunes, sugar, grated lemon rind and juice.  Heat slowly to the boiling point.  Boil rapidly until thick.  If desired add nuts to the jam two or three minutes before removing from heat.  Pour into hot sterilized jars and seal at once.
