Apple Bread

1/4 cup shortening
2/3 cup sugar
2 eggs, well beaten
2 cups sifted, enriched flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups coarsely grated, raw apples
1 tablespoon grated lemon peel
2/3 cup chopped nuts

Cream shortening and sugar together until light and fluffy.  Beat in eggs.  Combine sifted flour, baking powder, soda and slat and sift together.  Add dry ingredients alternately with grated apple to shortening mixture.  Stir in lemon peel and nuts.  The batter will be stiff.  Grease and flour an 8-by 5 by 2-inch loaf pan.  Turn dough into pan and bake in moderate oven, 350 degrees, for 50 to 60 minutes.  cool thoroughly before slicing.  Wrap in paper, then in a towel for storing in the bread box.

Yield: 1 loaf.
