Rice Creole

1/4 cup minced onion
1 12 oz can chopped ham or lunch meat
1 Tablespoon fat or salad oil
1 cup cooked rice
2 cups cooked or canned tomatoes
1/2 teaspoon salt
1 cup soft bread crumbs

Heat oven to 400 F. Toss together all ingredients, except bread crumbs in 10"x6"x2" baking dish.  Top with crumbs.  Bake at 400 F. 20 to 25 minutes, or until golden brown.  Makes 4 to 6 servings.
