Strawberry Jelly
3 1/2 quarts ripe strawberries
5 cups sugar
1 box powdered fruit pectin
Thoroughly crush washed, stemmed strawberries. Place in a large sieve lined with a double thickness of cheese cloth, or turn into a jelly bag.
Let drain. Measure 3 1/2 cups of the juice into a large saucepan.
Measure sugar into a bowl and set aside.
Add powdered pectin to strawberry juice and mix well. Place over high heat and stir until mixture comes to a hard boil. Stir in sugar at once. Bring to full rolling boil and boil hard one minutes, stirring constantly.
Remove from heat, skim off foam with a metal spoon and pour quickly into hot jelly glasses. cover jelly at once with a thin layer melted paraffin.
