Applesauce Meringue for Mincemeat Pie
2 egg whites
1/4 cup sugar
1/4 cup thick, sweetened applesauce
1/4 teaspoon ground cinnamon
1 (8-ounce) baker's mince pie
Beat egg whites until foamy but not stiff. Gradually add sugar, beating after each addition. Continue beating until mixture is shiny and holds stif peaks. Combine applesauce and cinnamon. Fold applesauce into meringue and blend well. Spread applesauce meringue over top of baker's mince pie so it touches edges of pie crust. Bake immediately at 350 degrees for 15 minutes or until lightly browned.
