Apple-Gingerbread Fry Cakes
1/8 inch-thick unpeeled Jonathan apple slices
1 package gingerbread mix
Use 1/3 less liquid than directions on package of gingerbread started in mixing batter. Drop batter by spoonfuls on greased, heated griddle.
Place 3 overlapping apple slices on each cake. Turn carefully but quickly when first side is done.
Bake second side slightly longer than ordinary fry cakes. Serve with heated syrup and butter.
Yield: 6 servings
