Sugar 'n' Spice Apple Doughnuts
4 Jonathan apples
1/4 cup water
2 eggs, beaten
1 cup granulated sugar
2 Tablespoons salad oil
1 cup buttermilk
5 cups sifted flour
4 1/2 teaspoons baking powder
1 teaspoon soda
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon salt
Wash, peel, quarter and core apples. Place in a covered saucepan with water. simmer until mushy, set aside to cool.
Mix beaten eggs with sugar. Add oil, buttermilk and 1 cup drained applesauce; beat to blend well.
Sift dry ingredients together, mix well with batter and chill dough in refrigerator.
Roll out to 1/2-inch thickness, and cut out with doughnut cutter. Fry in deep fat (375 degrees) turning once. Remove from fat and drain thoroughly on paper towels; turn doughnuts so all excess fat is removed. Roll in powdered sugar or granulated sugar.
Makes 2 1/2 dozen doughnuts.
