Raisin-Applesauce Bread
2/3 cup light or dark raisins
2/3 cup sugar (half brown, if desired)
1/3 cup soft shortening
1/2 teaspoon cinnamon
2 eggs, beaten
1 cup canned applesauce
1/2 cup chopped pecans
2 cups sifted all-purpose flour
1 Tablespoon baking powder
1/2 teaspoon soda
1 teaspoon salt
Rinse and dry raisins. Chop coarsely. Beat together thoroughly sugar, shortening, cinnamon and eggs. Stir in applesauce, raisins and nuts.
Sift flour, baking powder, soda and salt together. Add to first mixture. Stir just until blended. Turn into greased, floured loaf pan, 8 1/2 by 4 1/2 by 2 1/2 inches.
Bake in moderate oven, 350 degrees, about 1 hour. Cool thoroughly before cutting.
