Cranberry Orange Relish
Cranberry Orange Relish
4 vups fresh cranberries
2 oranges, quartered, seeds removed
2 cups sugar
Put cranberries and oranges (including rind) through food chopper. Add sugar. Chill. Makes 2 pints.
Delightful variations: Use a cored apple and 1/3 of a lemon instead of the oranges... or, sweeten the cranberry-orange mixture with honey... 1 cupful in place of the sugar will be enough. (If desired, 4 Tablespoons sucaryl solution may be substituted for sugar.)
To make Cranberry Relish Salad:
Make raspberry flavored gelatin, following directions on package but using 1 1/2 cups of water instead of 2 cups. When mixture begins to gel, fold in 1 cup of cranberry-relish. Pour into mold and chill until firm. When ready to serve, unmold and decorate with sprigs of parsely.
