Heavenly Southern Pie
1/4 cup butter, melted
3/4 cup brown sugar
1 1/2 cups mashed cooked sweet potatoes (fresh or canned)
3 eggs
2 tablespoons lemon juice
1/2 cup milk
1/2 teaspoon salt
1 teaspoon cinnamon
3/4 teaspoon nutmeg
1 teaspoon vanilla
1/2 cup chopped walnuts
2 cups miniature marshmallows
1 unbaked pie shell (9-inch size)
Melt butter in large saucepan. Remove from heat and stir in sugar. Add eggs one at a time and beat after each addition. Stir in sweet potato, lemon juice, milk, salt and flavorings. Beat until fluffy. Pour into unbaked pie shell. Bake in a 400 degree oven for 10 minutes. Reduce heat to 350 degrees and bake 30 minutes. Sprinkle nuts over top of pie. Place marshmallows over nuts. Bake 10 minutes longer.
