Apple-Cheese Bread
Apple-Cheese Bread
(Yield: 1 loaf)
2 cups sifted all-purpose flour
1 teaspoon baking powder
1 teaspoon soda
1 teaspoon salt
1/2 cup shortening
2/3 cup sugar
2 eggs
1 cup unpeeled ground apples and juice
1/2 cup grated Cheddar cheese
1/4 cup chopped nuts
Sift together flour, baking powder, soda and salt.
Cream shortening thoroughly. Gradually add sugar, creaming well. Add eggs, one at a time, beating about 1 minute after each addition. Add apples, cheese and nuts. Mix well.
Add dry ingredients in two portions, mixing only until all flour is dampened. Turn into greased loaf pan, 9- by 5- by 3-inches. Push batter well up into corners of pan, leaving center slightly hollow.
Bake in moderate oven, 350 degrees, about 1 hour
