Butterscotch Refrigerator Cookies
2 cups brown sugar, firmly packed
1 cup butter
2 eggs
4 cups sifted flour
1 teaspoon soda
1 teaspoon cream of tartar
1 cup chopped nuts
1 teaspoon vanilla
Cream brown sugar with butter until light and fluffy. Add eggs, one at a time, beating well after each addition.
Sift together flour, soda and cream of tartar. Add to butter mixture. Blend in nuts and vanilla. Form into 2 rolls. Wrap in waxed paper or aluminum foil. Store in refrigerator.
Slice thin with very sharp knife. Place on lightly greased baking sheet. Bake in preheated 350-degree oven 10 to 12 minutes. Watch closely to prevent burning.
Yield: About 8 dozen.
