Apple Cake Pie
5 large apples, cored and thinly sliced
1 teaspoon lemon juice
3/4 cup sugar
1/4 cup butter
1 egg, beaten
1/2 cup sifted flour
1/2 teaspoon baking powder
1/8 teaspoon salt
Place apples in well-greased 10-inch pie pan; sprinkle with lemon juice; cover with 1/4 cup sugar. Cream together butter and remaining 1/2 cup sugar; add egg and mix. Sift together flour, baking powder and salt; mix with creamed mixture. Spread over the fruit.
Bake in 350 degree oven 45 minutes. Making eight servings.
Custard Sauce: Combine 3 beaten egg yolks, 1/4 cup sugar and dash of salt. Stir in 3 cups of scalded milk. Cook over hot water, stirring constantly, until mixture coats spoon. Add 1 teaspoon vanilla. Chill. Makes about 2 1/2 cups sauce.
