Sweet-Cherry Cream Pie
Pastry for 1-crust 9-inch pie, unbaked
2 cups cherries
2/3 cup sugar
2 tablespoons flour
2 egg yolks
2 teaspoons lemon juice
1/8 teaspoon salt
Line the pie pan with pastry.
Pit cherries and put fruit into pie shell.
Combine sugar, flour, egg yolks, lemon juice and salt. Beat until well combined. Spread mixture over fruit.
Bake pie in a 400-degree oven for 20 minutes. Reduce heat and bake at 350 degrees for 20 minutes longer.
