Peanut Cookies
Peanut Cookies
1 cup peanut butter
1/4 cup shortening
1 cup granulated sugar or 1 cup brown sugar, firmly packed
1/2 cup boiling water
1 cup halved, salted peanuts
2 cups biscuit mix
Mix together the peanut butter, shortening, sugar and boiling water. Blend with a rotary beater until smooth. Stir in peanuts. Stir in the biscuit mix. Drop by small teaspoonfuls onto a lightly greased cookie sheet. Flatten with the bottom of a glass dipped in flour. Bake in a 400-degree oven 8 to 10 minutes, until set but not hard.
Yield: about 6 1/2 dozen 1 1/2-inch cookies.
