Spiced-Pineapple Sauce for Election-Breakfast Pancakes
1 No. 1 1/4 can (14 1/2 oz.)
1/2 cup granulated sugar
2 tablespoons cornstarch
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/8 teaspoon allspice
1/4 cup butter or margarine
Yellow food coloring
Drain pineapple juice from canned slices. Add enough water to the juice to make 2 cups liquid. Heat to boiling. In another saucepan, mix thoroughly the sugar, cornstarch adn salt. Slowly stir in the boiling pineapple juice-water mixture. Cook on medium heat, stirring constantly, until thick and clear. Remove. Stir in spices and butter or margarine with a few drops of yellow food coloring.
Serve hot on pancakes.
Yield: 2 cups sauce
