Yellow Layer Cake
Heat oven to 375 degrees.
2 eggs
1 cup milk, divided
1/2 cup shortening
2 1/2 cups cake flour
1 1/2 cups granulated sugar
3 teaspoons baking powder
1 teaspoon salt
1 Tablespoon vanilla
2 unbeaten eggs
Measure in sifter cake flour, granulated sugar, baking powder, salt.
Drop in shortening, pour in 2/3 cup milk and vanilla. Beat 300 full strokes, or 2 minutes.
Add 1/3 cup milk and eggs, beat batter 300 strokes or 2 minutes.
Pour batter in 2 pans. Bake for 25 to 30 minutes.
Fill layer with apricot jam and frost with 7 minute frosting. Can also bake in pan 14"x10"x2" for 30 minutes.
