Bacon Breakfast Bread

1 cup sifted all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
3 tablespoons sugar
1 cup yellow corn meal
1/2 cup crisp, coarsly chopped cooked bacon
1 egg, slightly beaten
1 cup milk
1/4 cup shortening, melted

Sift and measure flour.  Add baking powder, salt and sugar.  Sift again.  Add corn meal and bacon.  Mix thoroughly.

Combine egg, milk and melted, slightly cooled shortening.  Pour into flour mixture and stir just enough to moisten the dry ingredients.  Do not beat.

Turn into a greased square pan, 8 by 8 by 2 inches.

Bake in a hot oven, 425 degrees, about 40 minutes.  Cut into squares and serve hot.
