Baked Apples, Boston Style
Wash and core and pare upper half of large, firm apples. Place apples, pared half down in baking pan.
Make a syrup by cooking the parings in 1 cup water with 1 cup of sugar until well cooked. If desired add a little red food coloring to syrup.
Pour syrup over apples and bake in 350 degree oven for 25 minutes or until the fruit is nearly done. Turn apples, bringing pared half up. Return to oven for 20 minutes or until fruit is tender. Remove apples to serving dishes. Serve with a Lemon Sauce.

Lemon Sauce for Baked Apples
2 1/2 cups cold milk
1/2 cup cold light cream
2 tablespoons sugar
1 package lemon instant pudding mix
8 baked apples
Pour milk and cream into mixing bowl. Add sugar and pudding mix and beat slowly with egg beater just until well mixed, about 1 minute. Do not over-beat; mixture will be thin. Let stand to set, about 5 minutes. Just before serving, stir until smooth and creamy. Serve over baked apples.
