Almond Caramel Drops

1 quart unblanched almonds
1 cup granulated sugar
1/2 cup brown sugar (packed)
1/2 cup light corn syrup
1/2 cup milk
1/2 cup light cream
6 tablespoons butter
1/4 teaspoon salt
1 teaspoon vanilla

Place almonds in shallow pan and roast in slow oven (300 degrees F). 20 to 25 minutes, until lightly browned.  Cool.  Combine sugars, corn syrup, milk, cream, butter and salt in deep saucepan and cook, stirring until sugar is dissolved.  Cook slowly, stirring occasionally, to firm ball stage 9248 degrees F).  Remove from heat and stir in vanilla and almonds, stirring only enough to coat nuts.  Drop by spoonfuls onto waxed paper to cool.  Wrap each piece individually when cool.

Makes about 3 dozen large pieces.
